Coursing: hold and fire in order
Hold the mains until the starters are cleared, then fire them on your signal so a table is not rushed or left waiting.
Coursing lets a server enter a whole table's order at once, then fire each course when the table is ready. Held courses wait on the kitchen screen without printing. It works with station routing, so each cook sees a course only when it fires.
When you would use it
“A table of eight orders everything at once and the grill is slammed with mains before the starters land.”
“A server wants to fire dessert only after the plates are cleared.”
“A guest asks to hold the entree while they finish a drink.”
