Station routing: each cook sees their items
Send each menu item to the station that makes it, so the grill sees grill items and the fry cook sees fry items.
Station routing sends each item on a ticket to the screen or printer for the station that makes it. A burger and a salad on one order go to grill and cold. Each cook sees only their own items, so tickets are shorter and mistakes drop.
When you would use it
“A line of five cooks reads the same full ticket and each hunts for their own items.”
“A new cook needs to learn only their station's items on day one.”
“A kitchen adds a second fryer and wants to split the work.”
