Merge by table: see a table's dishes together
Group all items for a table on the pass so the expo can plate and send them out at the same time.
Merge by table groups every item for a table in one view at the pass, even when the items cooked at different stations. The expo can then plate and send a table together, and a food runner knows exactly when the whole table is ready.
When you would use it
“A table of four gets two meals while the other two sit waiting for the fry station.”
“The expo wants one glance to know what is still outstanding for table nine.”
“A food runner needs to know when a whole table is ready.”
How it goes, step by step
1
Turn on expo view
Select which screen is the pass.
2
Cooks bump their items
Each bump updates the table view.
3
Send the table
When every item is bumped the table is ready.
