Turn-time pacing: quote waits you can keep
Use your own seating history to estimate how long a table will take and space reservations to match the kitchen.
Turn-time pacing uses how long parties actually stayed at your tables to estimate when a table will free up and to space reservations. It starts rough and sharpens as it learns your room, with separate averages for each party size.
When you would use it
“You quote 20 minutes and the table takes 45.”
“Too many parties are booked at 7 and the kitchen gets buried.”
“A two-top and a six-top stay for very different lengths.”
How it goes, step by step
1
Seat and pay as usual
Your seating data builds up on its own.
2
Read the estimate
Quotes and openings use that history.
3
Adjust pacing
Cap covers per quarter-hour.
